5 quick overnight oatmeal and an extra recipe

Hi Everyone,
 
In this post I collected 5 healthy and delicious overnight oatmeal recipes which are my favourites. They are very quick you just mix it in a mason jar and put in the fridge for a night or some hours.
So if you have very little time in the morning this is the best choose for you. They contain lots of vitamins and good carbs and I swear you won't be hungry till noon.
The 6th bonus recipe takes a little bit more time but worth it to bake for the weekend.

CARROT CAKE OVERNIGHT PROTEIN OVERNIGHT OATMEAL

TOTAL TIME 5-10 mins.

INGREDIENTS

  • ¾ cup Unsweetened almond milk (or milk of choice)
  • ½ cup Plain low fat Greek yogurt (or mashed banana, applesauce or pumpkin)
  • ½ cup Grated carrots
  • ¼ tsp Salt
  • ½ tsp Cinnamon
  • ½ tsp Apple pie spice
  • 2 tbs Baking stevia (or ¼ cup sweetener)
  • 1 cup Old fashioned oats
  • ¼ cup Protein powder

INSTRUCTIONS

  1. In a small bowl, mix all of the ingredients together. Divide between 2 small bowls, mugs, or mason jars.
  2. Cover and refrigerate overnight (or for at least an hour (or more) so the oats soften and absorb the liquid).
  3. Top with chopped nuts, cinnamon, low sugar syrup, or vanilla Greek yogurt if desired!
  4. Enjoy cold, or microwave for 30-60 seconds to enjoy warm!

LEMON, THYME AND HONEY OVERNIGHT OATS

TOTAL TIME 5-10 mins

Serves: 1

INGREDIENTS

  • ½ cup rolled oats
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • ¼ tsp vanilla extract
  • ½ cup Greek-style yogurt
  • ⅓ cup milk
  • 2 - 3 sprigs of fresh thyme
  • 1 tsp honey
  • Extra honey, to serve

INSTRUCTIONS

  1. In a bowl or container, mix together the oats, lemon zest, lemon juice, vanilla extract, yogurt and milk. Remove the thyme leaves from the stems, and mix the leaves into the oatmeal along with the honey.
  1. Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
  1. In the morning, transfer the overnight oatmeal into a prettier dish if desired. Drizzle over some extra honey and enjoy!

STRAWBERRIES AND CREAME OVERNIGHT OATMEAL

PREP TIME 5 minutes

Serves: 1

INGREDIENTS

  • ⅓ cup milk of choice
  • ½ cup rolled oats
  • ¼ cup yogurt, plain or vanilla
  • ¼ tsp vanilla extract
  • pinch of salt
  • 5 or so fresh strawberries

INSTRUCTIONS

  1. Combine all ingredients except strawberries in a mason jar.
  2. Cover with lid and shake until combined.
  3. Store in the refrigerator overnight (or for several hours). Top with or stir in strawberries. Eat cold or warm up in the microwave!

PEACH, RICOTTA AND HONEY OVERNIGHT OATS

PREP TIME 15 minutes

Serves: 1

INGREDIENTS

  • ⅓ cup rolled oats
  • Pinch of ground cinnamon
  • 2 tsp ricotta cheese
  • 2 tsp honey
  • ½ tsp vanilla extract
  • ¼ cup milk
  • ½ cup Greek-style yogurt
  • 1 small peach, chopped

Toppings

  • Peach slices
  • Chopped walnuts
  • Ricotta cheese
  • Honey

INSTRUCTIONS

  1. In a bowl or container, combine the rolled oats, cinnamon, ricotta cheese, honey, vanilla extract and milk. Add the yogurt, and mix until completely combined. Stir in the chopped peach.
  2. Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
  3. In the morning, stir in a little extra milk if the overnight oats are too thick.
  4. Top the oats with a few peach slices, chopped walnuts, a dollop of ricotta cheese and a generous drizzle of honey.

PEANUT BUTTER & JELLY OVERNIGHT OAT

TOTAL TIME 5-10 mins

Serves: 1

INGREDIENTS

  • 1 cup fresh or frozen strawberries
  • 2 tsp chia seeds
  • 2 cups old fashioned or quick whole grain oats
  • 2 cups unsweetened vanilla almond milk
  • ½ cup plain Greek yogurt
  • ¼ heaping cup all natural peanut butter
  • 1 tsp pure vanilla extract
  • ¼ tsp sea salt
  • 2-3 Nunaturals stevia packets

INSTRUCTIONS

  1. Add strawberries and 2 tsp chia seeds to a small microwavable bowl. Microwave for 1 minute. Mash with a fork then set aside. Mix all remaining ingredients in a large bowl until well combined.
  2. Add strawberry chia sauce and oatmeal mixture in alternate layers in four glasses, cover with plastic wrap, and refrigerate overnight.
  3. Remove plastic wrap and serve immediately.

CHOCOLATE CHIA OVERNIGHT OATS

PREP TIME 15 minutes

Serves: 4

INGREDIENTS

  • 2 cups old fashioned oats
  • 2 cups milk of your choice (I used soy milk)
  • ¼ cup raw cacao powder or cocoa powder
  • ¼ cup pure maple syrup
  • 3 tbs chia seds

INSTRUCTIONS

  1. In a medium bowl, whisk all ingredients together until well combined.
  2. Divide into smaller containers such as mason jars, cover and place in refrigerator overnight.
  3. Top with fresh fruit and enjoy!

CHOCOLATE BANANA BAKED OATMEAL

PREP TIME 10 mins COOK TIME 45 mins TOTAL TIME 55 mins

Serves: 6

INGREDIENTS

  • 3-4 large bananas
  • 2 large eggs
  • ½ cup unsweetened cocoa powder
  • ⅓ cup brown sugar
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 2 cups milk
  • 2½ cups old-fashioned oats

INSTRUCTIONS

  1. Preheat the oven to 350 degrees. In a medium bowl, mash 1,5 cups of bananas (about 3 large or 4 medium bananas).
  2. Combine the mashed bananas with the eggs, cocoa powder, brown sugar, vanilla extract, salt, baking soda, and baking powder. Whisk together until smooth. Add the milk and whisk again. Make sure there are no clumps of cocoa powder.
  3. Stir the oats into the milk/chocolate/egg mixture. Coat the inside of an 8×8 inch casserole dish or large pie pan with non-stick spray. Pour the oat mixture into the pan. Slice the last banana and place the slices over top of the oat mixture. (optional)
  4. Place the oats in the oven and bake for about 45 minutes. Cut into 6 pieces and serve warm.
